SEE CORRECT JAMMINGS TOH BADT !! :)


Chei!, see what Nneka sent in o! I can just imagine how indigenous Nigerians are drooling over this meal. This dish is exclusively made in Nigeria by Nigerians for Nigerians. If you haven't figured out by now, this is a platter of Ewa agoyin, (beans boiled in a special way) with boiled yam, fried plantain, beef and eggs. Hmmmmm!  If you are viewing this page, and you don't know or haven't heard of Ewa agoyin, don't worry, Im going to do a full expo on it soon. So watch this space!.

EASY SHEPHERD'S PIE



Shepherd's Pie is originally an English dish, traditionally made with lamb or mutton. Nigerians typically make Shepherd's Pie with beef, I think mostly because we are much more of a beef-eating culture than a lamb-eating one. The English (and Australians and New Zealanders) call the beef dish a "cottage pie". Naming conventions aside, our Nigerian version of Shepherd's Pie is essentially a casserole, lined with cooked meat and vegetables, topped with mashed potatoes, and baked.Here is a basic recipe for a simple ground beef Shepherd's Pie. I dressed it up a bit with some veggies and Worcestershire sauce.
Easy Shepherd's Pie Recipe
Prep time: 10 minutes  Cook time: 50 minutes
INGREDIENTS
1 1/2 kgs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 kgs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasoning's of choice

SIMPLE PASTA WITH PRAWNS AND EGGS.

This kind of dish is a favourite amongst the busy professionals and those who don't have time to spend slaving in the kitchen but who still want to eat good and appetizing meals. LEGEND OF THE STEAK.



I have absolutely no idea who sent in this dish, the only info I have, is that the mysterious guest simply wants to be identified as "The Legend". I can see this guest cook has prepared a sumptuous steak dish... just take a look at those juicy tomatoes! Im going to prepare my own version of this meal on Monday.

This yummy delicacy was sent in by Mrs Ekpo, dear readers, I love this dish sooo much! Why?, take a good look at this meal, it is 100% HEALTHY. The fish is grilled and so is the plantain, no fatty addition or suspicious preservatives here. This happens to be a staple delicacy for the people of the Niger Delta region. Cheese, Egg and Ham Sandwich


Good morning, sorry I was incommunicado yesterday, now I'm back and this morning I decided to prepare this lovely looking cheese, egg and ham sandwich. It's very easy to put together and can be done while on the run to work. Also, because of the ham and eggs, its an ideal addition to your kids lunch pack. Down it with a cup of coffee, tea or juice and start your day beautifully.

DAILY FOOD FOR THOUGHT



There is this beautiful hymn which I loved singing while growing up, a line in it goes thus;
" new every morning is your love, the wakening and uprising prove". 
It always gave me this feeling of newness,of freshness and of Gods abiding love.
Whenever we sang that hymn on the assembly ground I felt renewed and yesterday didn't matter anymore,just today and the bright promises for tomorrow.
A lot of us have various challenges, sometimes we overcome them, sometimes we don't. It could be a physical challenge,like a bodily dysfunction, or a health challenge like sickle cell anaemia, or even, it could be a mental challenge,maybe a difficult subject,course or class we are going through or experiencing,it could even be a social challenge maybe we have unresolved issues with our friends, families or schoolmates. Whatever the challenge is we have it within us to overcome them. But at times things don't go the way we planned and sometimes we fail,sometimes we make mistakes, and sometimes we give up.And when these happen we find it difficult to move on, to make friends, to understand that difficult subject again. For those in the hospital,they lose the will to live, the pain may have been so great and recovery so slow that you just don't want to get up again. You are afraid of moving on and starting. If you repeated a class, or failed a course, you don't want to start all over again, the fear of failure keeps us stuck in one place.
But as long as we are alive and our hearts are beating,If we would just take a minute to listen and understand. Indeed we would hear it,telling us to start again, quietly pushing us to start afresh to give it one more go.
We can love again, anew. We can start all over again from scratch even a second, third, fourth time. No matter how long it takes. Every time we start afresh, we have experience on our side to avoid the mistakes we made in the previous attempt(s). We can learn from our yesterday, and make today even more beautiful. That is the beauty of human life.
It doesn't matter what we went through the first time, no matter how painful, or sad, or difficult. The morning comes with a brand new wave of freshness and light of truth and discovery, that if we allow, can empower us to be the best at what we may have  failed at. "Forgive,forget, accept and arise and start again", this is my mantra.And it works for me whenever I use it.
Let us capture our mornings,let us ride on the beautiful wave it brings. Let us begin again, yes! start all over again, as the sun rises up in the sky and dawn sets forth we begin again with love,and joy in peace. Lots of love, Uso.

My FIRST GUEST COOK. (I'm so excited)




Good morning, I'm so thrilled to post my first guest dish, this dish was sent in by Foodie. She prepared this dish for a loved one who is on a strict vegetarian and seafood diet. Now it's time for your comments to start coming in. Remember guys it's not about being a master chef or the world's best cook. It's simply about being proud of your ability to cook and prepare meals that suits your person, lover, kids, in-laws, friends and the viewing public. SAVOURY FISH AND BEANS PORRIDGE

People cook beans in various ways, but most of us just add palm oil, pepper and seasoning to their boiled beans. I've taken it a step farther by adding an assortment of dried croaker fish, stock fish flakes, dried prawns with celery, onions and spring onions to give it that heady steamy aroma. Yummy! 

RECIPE.
 ( This serves about three.)
 2cups of beans (Oloyin).
Croaker fish(quartered).
Stock fish flakes
 2cups Dried prawns
1/4kg Sliced pepper (rodo).
1 meduim sized onion (sliced).
 Sliced celery (handful).
Chopped spring Onion(about a handful). Palm oil. Salt. Seasoning. Water.
